Our hens are going nuts at the moment and giving us a much appreciated surplus of eggs. This is my first attempt at pickles eggs. Instead of sugar I added beetroot to the mix of water, apple cider vinegar, garlic and onion. They should be ready in less than a week. Next I might try to cure/ ferment eggs in kimchi.
